Most of what you experience as flavour is not taste at all — it is smell, arriving at the nose from the back of the mouth while you chew. Your tongue contributes sweet, salty, sour, bitter and savoury; everything else, the entire character of strawberry or roast beef or coffee, is olfactory. Now consider what an aircraft cabin does to your nose. The air is extremely dry, typically well below 20% humidity, drier than most deserts, and smell receptors need a moist nasal lining to work. The cabin is also pressurised to the equivalent of roughly 2,000 metres of altitude, which reduces the pressure at the receptors.
